Seafood
- 1 lb imitation crab (or a mix of shrimp + crab)
- 2 celery stalks, finely diced
- 2–3 green onions, chopped
- 1 tbsp fresh dill (optional but great)
Dressing (light)
- 1/2 cup light mayo (or Greek yogurt)
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp Old Bay or paprika
- Salt & pepper to taste
