π Ingredients
Chicken Meatballs
- 1 lb (450 g) ground chicken
- Β½ cup breadcrumbs
- 1 large egg
- Β½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp onion powder
- Β½ tsp black pepper
- Β½ tsp salt
- 2 tbsp milk
- 2 tbsp chopped parsley (optional)
Creamy Spinach Sauce
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- Β½ cup chicken broth
- ΒΎ cup grated Parmesan cheese
- 2 cups fresh spinach, chopped
- Salt & pepper to taste
π©βπ³ Instructions
- Preheat oven to 400Β°F (200Β°C).
- In a bowl, mix all meatball ingredients until just combined.
- Form into meatballs and place in a lightly greased baking dish.
- Bake 15 minutes until lightly golden.
Sauce
- In a saucepan, melt butter and sautΓ© garlic until fragrant.
- Add cream and chicken broth; simmer 3β4 minutes.
- Stir in Parmesan until smooth.
- Add spinach and cook until wilted.
- Season with salt and pepper.
Finish
- Pour sauce over the meatballs.
- Return to oven and bake 10β15 minutes until bubbly and golden on top.
- Rest 5 minutes before serving.
