Ingredients

  • Sparkling water or more milk (as needed)
  • Oil or butter for cooking

Instructions

  1. In a bowl, whisk flour, eggs, milk, sugar, salt, and vanilla until very smooth.
  2. Batter should be thin and pourable (thinner than pancake batter). Add sparkling water or milk if needed.
  3. Heat a lightly greased non-stick pan over medium heat.
  4. Pour a small ladle of batter, swirl pan to coat thinly.
  5. Cook about 30โ€“40 seconds, flip, cook another 20 seconds.
  6. Stack cooked crepes on a plate and keep covered.
