  1. Mix dry ingredients:
    In a large bowl, whisk together flour, baking powder, salt, and sugar.
  2. Add wet ingredients:
    In another bowl, beat the egg with milk, melted butter, and vanilla. Pour the wet mixture into the dry ingredients and stir just until combined (don’t overmix — lumps are okay!).
  3. Cook the pancakes:
    Heat a nonstick skillet or griddle over medium heat and grease lightly with butter.
    Pour about ¼ cup of batter for each pancake. Cook until bubbles form on top and the edges look set, then flip and cook until golden on the other side.
  4. Serve warm:
