👩‍🍳 Instructions

1️⃣ Preheat & Prepare

🔥 Preheat oven to 375°F (190°C).
🧈 Lightly grease a 9×13-inch baking dish.

2️⃣ Sauté the Spinach

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and cook until soft (about 3 minutes).
  3. Stir in garlic and cook for 30 seconds.
  4. Add spinach and cook until wilted. Remove from heat.

3️⃣ Layer the Dish

  1. Arrange half of the sweet potatoes in an even layer in the baking dish.
  2. Spread half of the spinach mixture on top.
  3. Repeat with the remaining sweet potatoes & spinach.

4️⃣ Make the Creamy Sauce

  1. In a bowl, whisk together milk, cream, Dijon mustard, salt, pepper, and paprika.
  2. Pour the mixture evenly over the layered dish.

5️⃣ Add the Toppings & Bake

  1. Sprinkle the top with shredded cheese, Parmesan, and breadcrumbs.
  2. Cover with foil and bake for 25 minutes.
  3. Remove foil and bake for another 15 minutes, until golden and bubbly.
