- Line a tray with parchment paper. Arrange pecans in small clusters of 3โ4 halves each.
- Melt the caramel: In a microwave-safe bowl, combine caramels and heavy cream. Heat in 30-second bursts, stirring until smooth.
- Spoon caramel over each pecan cluster (just enough to cover the center). Let it set for 10โ15 minutes.
- Melt chocolate: Combine chocolate chips and butter (or coconut oil). Microwave in 20-second intervals, stirring until glossy and smooth.
- Cover with chocolate: Spoon or drizzle over the caramel layer to coat.
- Chill in the fridge for 15โ20 minutes, until set. Sprinkle with sea salt, if desired.

Wrap each cluster in mini cupcake liners, place them in a festive tin or box, and tie with a ribbon โ they look gourmet but cost pennies to make!
