🇭🇺 Traditional Hungarian Pörkölt (Beef Stew)


👩‍🍳 Instructions

  1. Cook the onions
    • Heat lard in a pot.
    • Add onions and cook slowly until golden and soft (this is the base of flavor).
  2. Add garlic + spices
    • Stir in garlic and caraway seeds.
    • Remove pot briefly from heat.
    • Add paprika (important: don’t burn it or it turns bitter).
  3. Add meat
    • Return pot to heat.
    • Add beef cubes and stir until coated in paprika-onion mixture.
  4. Add vegetables
    • Add tomato and green pepper.
  5. Simmer slowly
    • Pour in a little water or broth.
    • Cover and simmer gently for 1.5–2.5 hours, stirring occasionally.
    • Add more liquid only if needed.
  6. Finish
    • When meat is tender and sauce is thick, adjust salt and pepper.

🍽️ How to serve (traditional)

  • Egg noodles (nokedli)
  • Boiled potatoes
  • Fresh bread
  • Pickles on the side (very Hungarian!)
