- In a bowl, whisk eggs, milk, sparkling water, sugar (if using), and salt.
- Gradually add flour while whisking to get a smooth, lump-free batter.
- Stir in oil or melted butter. Let the batter rest for 15β20 minutes.
- Heat a lightly greased non-stick pan over medium heat.
- Pour a small amount of batter and swirl the pan to form a thin layer.
- Cook for about 1β2 minutes, flip, and cook the other side briefly.
- Repeat with the remaining batter.
