
🧾 Ingredients:
- 250 g all-purpose flour
- 2 eggs
- 500 ml milk
- 100 ml sparkling water (optional, for lighter texture)
- 2 tbsp sugar
- 1 tsp vanilla extract
- 1 pinch salt
- 1 tbsp oil or melted butter
For filling (sweet options):
- Apricot jam
- Cocoa powder + sugar
- Chocolate spread
- Sweetened cottage cheese

👩🍳 Instructions:
- Prepare batter:
In a bowl, whisk eggs, milk, sparkling water, sugar, vanilla, and salt. - Gradually add flour while whisking to get a smooth, thin batter.
- Stir in oil or melted butter.
- Let the batter rest for 15–20 minutes.
- Cook pancakes:
Heat a lightly greased pan over medium heat. - Pour a small amount of batter and swirl to form a very thin layer.
- Cook for about 1 minute, flip, and cook briefly on the other side.
- Stack cooked pancakes and keep covered.
- Fill and roll:
Spread your favorite filling, roll or fold, and serve.
