🇭🇺 Hungarian Potato Paprikash (Paprikás Krumpli)

🧾 Ingredients

  • 1 kg potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 tbsp vegetable oil or lard
  • 2 tbsp Hungarian sweet paprika
  • 1 green bell pepper, chopped
  • 1 tomato, chopped
  • 200 g smoked sausage, sliced
  • 750 ml water or broth
  • 1 bay leaf (optional)
  • Salt and black pepper, to taste

👩‍🍳 Instructions

  1. Heat the oil in a large pot and sauté the onion until soft and golden.
  2. Remove from heat and stir in the paprika.
  3. Add the bell pepper, tomato, and sausage. Cook for 2–3 minutes.
  4. Add the potatoes and mix well.
  5. Pour in the water or broth and add the bay leaf.
  6. Season with salt and pepper.
  7. Bring to a boil, then reduce heat and simmer for 30–40 minutes, until the potatoes are tender.
  8. Stir occasionally, gently breaking up some potatoes to thicken the sauce.
  9. Serve hot with fresh bread and pickles.
