- Activate yeast:
Mix yeast with lukewarm milk and a little sugar. Let sit for 5–10 minutes until foamy. - Prepare the dough:
In a bowl, mix flour, powdered sugar, and salt. Add butter and rub until crumbly. - Add egg yolks and yeast mixture. Knead into a smooth dough.
- Divide into 2 equal parts, cover, and let rest for 30 minutes.
- Make the filling:
Heat milk and sugar until dissolved. Remove from heat, then mix in walnuts, vanilla, and lemon zest. Let cool.
- Assemble:
Roll each dough portion into a rectangle. - Spread the walnut filling evenly, leaving a small border.
- Roll tightly into a log and seal the edges.
- Prepare for baking:
Place rolls on a lined baking tray. - Brush with egg yolk, let dry slightly, then brush with egg white.
- Prick lightly with a fork.
