- Make the batter:
In a bowl, whisk eggs, milk, sparkling water, sugar, and salt. - Gradually add flour while whisking until smooth and lump-free.
- Stir in oil or melted butter.
- Let the batter rest for 15β20 minutes.
- Cook the crepes:
Heat a lightly greased pan over medium heat. - Pour a small amount of batter and swirl to create a thin layer.
- Cook about 1 minute, flip, and cook briefly on the other side.
- Stack and keep covered.
- Fill & serve:
Spread filling, then roll or fold.
