- Finely shred the cabbage, sprinkle with a little salt, let it sit for 10–15 minutes, then squeeze out excess moisture.
- Heat oil or lard in a large pan. Add sugar and let it melt slightly, then add the cabbage. Cook over medium heat, stirring often, until golden brown and caramelized (about 25–30 minutes).
- Season with salt and a generous amount of black pepper.
- Cook the noodles in salted water until tender, then drain well.
- Mix the cooked noodles with the caramelized cabbage, toss well, and cook together for 2–3 minutes before serving.
