  1. Activate yeast:
    Mix yeast with lukewarm milk and a little sugar. Let sit for 5–10 minutes until foamy.

  1. Prepare dough:
    In a bowl, combine flour, powdered sugar, and salt.
  2. Add butter and rub until crumbly.
  3. Add egg yolks and yeast mixture, then knead into a smooth dough.
  4. Divide into 4 equal portions and let rest for 30 minutes.

  1. Make fillings:
    Heat milk with sugar until dissolved.
  2. Divide into two bowls—mix one with walnuts, the other with poppy seeds.
  3. Add vanilla and lemon zest. Let cool.

  1. Shape rolls:
    Roll each dough portion into a rectangle.
  2. Spread filling evenly (2 walnut rolls, 2 poppy seed rolls).
  3. Roll tightly and seal edges.

  1. Prepare for baking:
    Place on a lined tray.
  2. Brush with egg yolk, let dry slightly, then brush with egg white.
  3. Prick with a fork.
