- Cook onions:
Heat oil or lard in a large pan or pot. - Add onions and cook until soft and translucent.
- Add paprika:
Remove from heat and stir in paprika.
- Add vegetables:
Return to heat and add sliced peppers and tomatoes. - Season with salt and pepper.
- Cook stew:
Simmer uncovered for 25–30 minutes until peppers are soft and mixture thickens.
- Optional additions:
- Add sliced smoked sausage for a richer flavor
- Stir in eggs at the end for a rustic version (like a scramble)
