🇭🇺 Authentic Lecsó (Hungarian Pepper Stew)

🧾 Ingredients:

  • 3 tbsp oil or lard
  • 2 large onions (sliced)
  • 2 tbsp Hungarian sweet paprika
  • 4–5 Hungarian wax peppers (or bell peppers, sliced)
  • 2–3 ripe tomatoes (chopped) or 200 g canned tomatoes
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • 1 smoked sausage (kolbász), sliced (optional)
  • 1–2 eggs (optional, for serving)

👩‍🍳 Instructions:

  1. Cook onions:
    Heat oil or lard in a large pan or pot.
  2. Add onions and cook until soft and translucent.

  1. Add paprika:
    Remove from heat and stir in paprika.

  1. Add vegetables:
    Return to heat and add sliced peppers and tomatoes.
  2. Season with salt and pepper.

  1. Cook stew:
    Simmer uncovered for 25–30 minutes until peppers are soft and mixture thickens.

  1. Optional additions:
  • Add sliced smoked sausage for a richer flavor
  • Stir in eggs at the end for a rustic version (like a scramble)
