- Cook the sausages:
- In a large skillet, heat 1 tbsp olive oil over medium heat.
- Add sausages and cook until browned on all sides, about 8–10 minutes. You can slice them after cooking or leave them whole. Remove and set aside.
- Cook the peppers and onions:
- In the same skillet, add the remaining 1 tbsp olive oil.
- Add the onions and bell peppers; sauté for 5–7 minutes until softened.
- Add garlic, oregano, salt, and pepper; cook 1 more minute.
- Combine:
- Slice the sausages if desired and return them to the skillet.
- Stir everything together and cook another 2–3 minutes.
- Optional: Add tomato sauce or crushed tomatoes, simmer 5 minutes for extra flavor.
- Serve:
- Serve on hoagie rolls for sandwiches, over pasta, or simply as is.
