🇹🇷 Turkish Bread (Ekmek)

Ingredients

  • 3½ cups (440 g) all-purpose flour
  • 1½ tsp salt
  • 2 tsp sugar
  • 2¼ tsp (7 g) instant yeast
  • 1¼ cups warm water
  • 2 tbsp olive oil

Topping (optional)

  • Sesame seeds or nigella seeds

Instructions

  1. In a bowl, mix warm water, sugar, and yeast. Let stand 5–10 minutes until foamy.
  2. Add olive oil and salt. Gradually mix in flour to form a soft dough.
  3. Knead 8–10 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise 1 hour until doubled.
  5. Divide dough into 2 loaves. Shape round or oval and place on a lined baking tray.
  6. Cover and rest 20 minutes.
  7. Brush with water, sprinkle seeds if using, and score lightly.
  8. Bake at 425°F (220°C) for 20–25 minutes until golden and hollow-sounding.
  9. Cool slightly before slicing.
