What Is Hungarian Szilvás Gombóc?

Szilvás Gombóc (pronounced SEE-lvahsh GOM-bots) is a traditional Hungarian dumpling made from a tender potato-based dough wrapped around whole fresh plums. A small cube of sugar and a pinch of cinnamon are often tucked inside the plum, creating a delicious syrupy filling as the dumplings cook.

After boiling, the dumplings are rolled in golden toasted breadcrumbs sautéed in butter, then generously sprinkled with cinnamon sugar before serving.


Ingredients

For the Potato Dough

  • 1 kg (2¼ lbs) starchy potatoes
  • 250–300 g (2–2½ cups) all-purpose flour
  • 1 large egg
  • 30 g (2 tablespoons) melted butter
  • ½ teaspoon salt
