Creamy Chicken & Vegetable Comfort Soup

🛒 Ingredients

  • 2 tbsp butter or olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 potatoes, diced
  • 2 cups cooked chicken (shredded or chopped)
  • 6 cups chicken broth
  • 1 cup milk or cream
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried thyme or oregano
  • Optional: parsley for garnish

👩‍🍳 Instructions

  1. In a large pot, heat butter/oil over medium heat.
  2. Add onion and garlic, sauté until soft and fragrant.
  3. Add carrots, celery, and potatoes. Stir for 2–3 minutes.
  4. Pour in chicken broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until vegetables are tender.
  5. Add chicken, milk/cream, salt, pepper, paprika, and herbs.
  6. Simmer 5–10 more minutes. Taste and adjust seasoning.
  7. Serve hot, garnish with parsley if desired.
