½ cup shredded cheese (cheddar, mozzarella, or your choice)
4 slices cooked bacon, crumbled (optional)
2 green onions, chopped (optional)
1 egg, beaten (for brushing, optional)
Instructions
Cook potatoes: Boil potatoes in salted water until tender (15–20 minutes). Drain.
Mash: Mash potatoes with butter, milk, salt, and pepper until smooth.
Prepare nests: Preheat oven to 400°F (200°C). Grease a muffin tin. Spoon mashed potatoes into each cup and press a small well in the center.
Stuff: Fill each well with cheese, bacon, and green onions if using. Top with a little extra mashed potato to form a “nest.” Brush with beaten egg for a golden finish.
Bake: Bake 15–20 minutes until tops are lightly golden and cheese is melted.
Serve: Let cool slightly, then carefully remove from muffin tin and serve warm.
