🔥 Instructions

1️⃣ Slow Cook the Roast

  1. Season roast generously with salt & pepper.
  2. Heat olive oil in a skillet over high heat. Sear roast 2–3 minutes per side for rich flavor.
  3. Transfer to slow cooker.
  4. Add onions, garlic, carrots, celery, thyme & rosemary.
  5. Pour in beef broth + Worcestershire sauce.
  6. Cover and cook:
    Low: 8–9 hours (fall-apart tender)
    High: 4–5 hours

2️⃣ Make the Gravy

  1. Remove roast & veggies when done.
  2. Strain liquid into a saucepan.
