
Instructions
- Cook the shrimp
- Heat olive oil and 1 tbsp butter in a skillet over medium-high heat.
- Add garlic, then shrimp. Season with salt, pepper, and optional chili flakes.
- Cook 2–3 minutes until shrimp are pink and just cooked. Remove and roughly chop.
- Prepare the bread
- Spread garlic butter generously on one side of each bread slice.
- Assemble the sandwiches
- Place one slice of bread, buttered side down, in a skillet.
- Add a layer of shredded mozzarella, then chopped shrimp, then provolone (if using), and more mozzarella.
- Top with the second slice of bread, buttered side up.
- Grill the sandwich
- Cook over medium-low heat until golden brown and crispy on one side.
- Flip carefully and cook the other side until cheese is melted and bread is crispy.
- Serve
- Slice in half and serve warm. Great with a side of marinara sauce for dipping or a light green salad.
