Shrimp Grilled Cheese with Garlic Bread

Instructions

  1. Cook the shrimp
    • Heat olive oil and 1 tbsp butter in a skillet over medium-high heat.
    • Add garlic, then shrimp. Season with salt, pepper, and optional chili flakes.
    • Cook 2–3 minutes until shrimp are pink and just cooked. Remove and roughly chop.
  2. Prepare the bread
    • Spread garlic butter generously on one side of each bread slice.
  3. Assemble the sandwiches
    • Place one slice of bread, buttered side down, in a skillet.
    • Add a layer of shredded mozzarella, then chopped shrimp, then provolone (if using), and more mozzarella.
    • Top with the second slice of bread, buttered side up.
  4. Grill the sandwich
    • Cook over medium-low heat until golden brown and crispy on one side.
    • Flip carefully and cook the other side until cheese is melted and bread is crispy.
  5. Serve
    • Slice in half and serve warm. Great with a side of marinara sauce for dipping or a light green salad.
