  • 6 oz (170 g) scallops
  • 6 oz (170 g) crab meat (or lobster, optional)
  • 2 tbsp butter
  • 1 small shallot or onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup fish stock or seafood broth
  • ½ cup grated Gruyère or Parmesan cheese
  • 1 tbsp flour
  • Salt & black pepper, to taste
  • Pinch of paprika or cayenne (optional)
  • Fresh parsley, chopped
  • Breadcrumbs (optional, for topping)

👩‍🍳 Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, melt butter and sauté shallot until soft.
  3. Add garlic and cook 30 seconds.
  4. Stir in flour and cook 1 minute.
  5. Slowly add fish stock, then cream, stirring until smooth.
  6. Season with salt, pepper, and paprika.
  7. Gently fold in shrimp, scallops, and crab.
  8. Spoon mixture into small oven-safe ramekins (cassolettes).
  9. Sprinkle cheese (and breadcrumbs if using) on top.
  10. Bake 15–18 minutes until bubbly and lightly golden.
