Instructions
- Prep oven
- Preheat to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment.
- Make brownie base
- In a bowl, whisk melted butter, sugar, vanilla, food coloring, and vinegar.
- Add eggs and whisk until smooth.
- Sift in flour, cocoa, and salt. Mix gently until just combined.
- Make cream cheese swirl
- Beat cream cheese, sugar, egg yolk, and vanilla until smooth and creamy.
- Assemble
- Pour most of the brownie batter into the pan, reserving about ¼ cup.
- Spread cream cheese mixture over it.
- Drop spoonfuls of the reserved red batter on top and swirl with a knife for a marbled effect.
- Bake
- Bake 30–35 minutes, until set but still slightly fudgy in the center.
- Cool completely before cutting into squares.
👉 These brownies taste even better after chilling a bit — the cheesecake swirl sets beautifully.
Would you like me to also give you a layered bar version (more cream cheese filling, almost like a red velvet cheesecake bar) for a richer dessert?
