- Prep the oven
Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper. - Make the cheesy base
In a small bowl, mix the Parmesan, garlic powder, paprika, and salt. Spread this evenly over the bottom of your baking dish. - Butter those potatoes
Brush the cut side of each potato half with melted butter. Then press them cut-side down into the Parmesan mixture. - Bake
Bake uncovered for 35–45 minutes, or until the potatoes are tender and the cheese underneath is crispy and golden. - Cool and serve
Let them rest for 5 minutes before removing — use a thin spatula to gently lift them so the crust stays intact. Garnish with chopped parsley if you like.

- Want a flavor boost? Add some onion powder, a pinch of chili flakes, or a sprinkle of Italian seasoning to the cheese mix.
