1. Make the Batter:
- In a mixing bowl, whisk the eggs.
- Add milk, flour, salt, sugar, and vanilla. Mix until smooth (no lumps).
- Stir in sparkling water last for a light batter.
- Let rest for 15–20 minutes.
2. Cook the Palacsinta:
- Heat a non-stick skillet over medium heat. Lightly grease with butter or oil.
- Pour a small ladle of batter into the pan. Swirl to coat the bottom evenly.
- Cook for about 1–2 minutes per side, until golden.
- Flip with a spatula and cook the other side briefly.
3. Fill and Serve:
- Spread with your favorite filling:
- Apricot jam 🍑
- Nutella 🍫
- Sweetened cottage cheese or ricotta
- Ground walnuts with sugar and a splash of milk
- Roll or fold and dust with powdered sugar.
✨ Tips:
- For savory palacsinta, skip the sugar and vanilla. Fill with ham, cheese, or mushrooms!
- Can be made ahead and stored in the fridge for a couple of days.
- Also delicious baked in layers (rakott palacsinta).
