
Ingredients (Makes 8–10 thin pancakes)
- 1 cup (125 g) all-purpose flour
- 2 large eggs
- 1¼ cups (300 ml) milk
- ¼ cup (60 ml) sparkling water or soda water
- Pinch of salt
- 1 tsp sugar (optional, for sweet version)
- 1 tbsp oil or melted butter (plus more for cooking)
Instructions
- Make the batter:
In a bowl, whisk eggs, milk, sparkling water, salt, sugar (if using), and oil.
Gradually whisk in flour until smooth and thin.
Let batter rest for 15–20 minutes. - Cook the pancakes:
Heat a lightly oiled nonstick pan over medium heat.
Pour a small ladle of batter into the pan and swirl to coat thinly.
Cook 1–2 minutes until edges lift, flip, and cook another minute. - Fill & roll:
Spread filling over each pancake, roll or fold, and serve.
