Nokedli – Hungarian Dumplings


Instructions:

  1. Make the batter:
    • In a bowl, mix flour and salt.
    • Add eggs and water.
    • Stir until you get a soft, sticky dough (thicker than pancake batter, softer than bread dough).
  2. Boil water:
    • Bring a large pot of salted water to a boil.
  3. Form the dumplings:
    • Use a spaetzle maker, colander, or spoon to drop small pieces of dough into the boiling water.
  4. Cook:
    • Cook for 2–3 minutes.
    • When dumplings float to the surface, they are done.
  5. Drain:
    • Remove with a slotted spoon and drain well.
  6. Optional finish:
    • Toss with a little butter or oil to prevent sticking.
