Instructions
- Preheat oven to 375°F (190°C).
- Prepare the meatloaf mixture:
- In a large bowl, combine breadcrumbs and milk. Let soak 5 minutes.
- Add ground beef, onion, garlic, eggs, ketchup, Worcestershire, mustard, salt, pepper, and thyme. Mix gently until combined (don’t overmix).
- Shape & glaze:
- Place mixture into a greased loaf pan or shape into a loaf on a lined baking sheet.
- Stir glaze ingredients together and spread half over the meatloaf.
- Bake:
- Bake for 45 minutes, then spread remaining glaze on top.
- Continue baking another 15–20 minutes (internal temp should reach 160°F / 71°C).
- Rest for 10 minutes before slicing.
- Make mashed potatoes:
- While the meatloaf bakes, boil potatoes in salted water until tender (15–20 minutes).
- Drain, then mash with butter, warm milk, salt, and pepper until creamy.
- Serve:
- Slice meatloaf and serve alongside a generous scoop of mashed potatoes. Add gravy if you like extra richness. 🍽️
✨ Comfort food at its best — tender meatloaf, creamy potatoes, and a sweet-savory glaze.
Would you like me to also include a cheesy mashed potato topping version, where the meatloaf bakes under a layer of mashed potatoes (like a meatloaf shepherd’s pie)?
