Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the meatloaf mixture:
    • In a large bowl, combine breadcrumbs and milk. Let soak 5 minutes.
    • Add ground beef, onion, garlic, eggs, ketchup, Worcestershire, mustard, salt, pepper, and thyme. Mix gently until combined (don’t overmix).
  3. Shape & glaze:
    • Place mixture into a greased loaf pan or shape into a loaf on a lined baking sheet.
    • Stir glaze ingredients together and spread half over the meatloaf.
  4. Bake:
    • Bake for 45 minutes, then spread remaining glaze on top.
    • Continue baking another 15–20 minutes (internal temp should reach 160°F / 71°C).
    • Rest for 10 minutes before slicing.
  5. Make mashed potatoes:
    • While the meatloaf bakes, boil potatoes in salted water until tender (15–20 minutes).
    • Drain, then mash with butter, warm milk, salt, and pepper until creamy.
  6. Serve:
    • Slice meatloaf and serve alongside a generous scoop of mashed potatoes. Add gravy if you like extra richness. 🍽️
