Ingredients

For the Meatloaf:

  • 1 ½ lbs ground beef (or mix beef & pork)
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • ¾ cup breadcrumbs (or crushed crackers)
  • ½ cup milk
  • 2 large eggs
  • 2 tbsp ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme or Italian seasoning

Glaze:

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar (or Worcestershire sauce)

For the Mashed Potatoes:

  • 2 lbs russet or Yukon Gold potatoes, peeled & cut into chunks
  • 4 tbsp butter
  • ½ cup milk (warm)
  • Salt & pepper, to taste
