Mashed Potato and Meat Casserole Recipe

Instructions

  1. Prepare the Mashed Potatoes:
    • Boil the potatoes in salted water until fork-tender (about 15–20 minutes).
    • Drain and mash with milk, butter, and cheese (if using). Season with salt and pepper to taste. Set aside.
  2. Cook the Meat Filling:
    • In a large skillet, cook the ground meat over medium heat until browned. Drain any excess fat.
    • Add the diced onion and garlic. Sauté until softened (about 3–4 minutes).
    • Stir in the mixed vegetables, tomato sauce, broth, Worcestershire sauce, smoked paprika, thyme, salt, and pepper. Let the mixture simmer for 5–7 minutes until slightly thickened.
  3. Assemble the Casserole:
    • Preheat your oven to 375°F (190°C).
    • Spread the meat filling evenly in the bottom of a greased 9×13-inch casserole dish.
    • Spoon the mashed potatoes over the meat layer, spreading evenly with a spatula.
  4. Add the Topping:
    • Sprinkle shredded cheese over the top.
  5. Bake:
    • Place the casserole in the preheated oven and bake for 20–25 minutes, or until the cheese is melted and the top is golden.
    • Garnish with chopped parsley before serving, if desired.
