
🌮🧀 Loaded Cheesy Pocket Tacos
Ingredients
- 8 small flour tortillas
- 1 lb ground beef or chicken
- 1 tbsp oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade)
- ½ cup water
- 1½ cups shredded cheddar or Mexican-blend cheese
- ½ cup cooked rice or seasoned potatoes (optional)
Optional Add-Ins
- Jalapeños
- Corn
- Black olives
Instructions
- Preheat oven to 375°F (190°C) or heat a skillet over medium heat.
- Heat oil in a pan. Cook onion and garlic until soft.
- Add ground meat and brown. Stir in taco seasoning and water; simmer 5 minutes.
- Lay tortillas flat. Add meat, rice (if using), and plenty of cheese.
- Fold tortillas into sealed pockets.
- Oven method: Place on baking sheet and bake 12–15 minutes until golden and melty.
Skillet method: Cook pockets in a dry pan until crispy on both sides. - Serve hot.
