Lecsó (Hungarian Pepper Stew)

  1. Heat oil or lard in a pan and sauté the onion until soft.
  2. Add sliced sausage (if using) and cook for a few minutes.
  3. Remove from heat, add paprika, and stir quickly.
  4. Add peppers and cook for 5–10 minutes until slightly softened.
  5. Add tomatoes, salt, pepper, and sugar.
  6. Simmer on medium heat until vegetables are tender and juicy.
  7. (Optional) Crack eggs into the stew and stir gently until cooked.
  8. Adjust seasoning and serve hot.
