Hungarian Sweet Pancakes (Palacsinta)

Ingredients:

  • 1 cup (125 g) all-purpose flour
  • 2 large eggs
  • 1 1/4 cups (300 ml) milk
  • 1/4 cup (60 ml) sparkling water or water
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1 tbsp oil or melted butter
  • 1 tsp vanilla (optional)
  • Butter or oil for the pan

Fillings (optional):

  • Apricot jam
  • Sweetened cottage cheese
  • Nutella
  • Ground walnuts + sugar

Instructions:

  1. In a bowl, whisk flour, eggs, milk, water, sugar, salt, oil, and vanilla until smooth.
  2. Let batter rest 20–30 minutes.
  3. Heat a lightly greased non-stick pan over medium heat.
  4. Pour a thin layer of batter (about 1/4 cup), swirl to spread evenly.
  5. Cook 1–2 minutes, flip, and cook 30–60 seconds more.
  6. Spread filling over each pancake, roll or fold, and dust with powdered sugar.

Serve warm.
