
Ingredients:
- 1 cup (125 g) all-purpose flour
- 2 large eggs
- 1 1/4 cups (300 ml) milk
- 1/4 cup (60 ml) sparkling water or water
- 2 tbsp sugar
- 1/4 tsp salt
- 1 tbsp oil or melted butter
- 1 tsp vanilla (optional)
- Butter or oil for the pan
Fillings (optional):
- Apricot jam
- Sweetened cottage cheese
- Nutella
- Ground walnuts + sugar
Instructions:
- In a bowl, whisk flour, eggs, milk, water, sugar, salt, oil, and vanilla until smooth.
- Let batter rest 20–30 minutes.
- Heat a lightly greased non-stick pan over medium heat.
- Pour a thin layer of batter (about 1/4 cup), swirl to spread evenly.
- Cook 1–2 minutes, flip, and cook 30–60 seconds more.
- Spread filling over each pancake, roll or fold, and dust with powdered sugar.
Serve warm.
