
Instructions:
- Make the batter:
- In a bowl, whisk flour, eggs, milk, water, salt, and sugar (if using).
- Mix until smooth and lump-free.
- Stir in 1 tbsp oil.
- Rest the batter:
- Let it rest for 15–20 minutes (this makes the crepes softer).
- Cook the crepes:
- Heat a lightly oiled non-stick pan over medium heat.
- Pour a small amount of batter and swirl to coat the pan thinly.
- Cook for about 1 minute, then flip and cook another 30 seconds.
- Stack:
- Stack cooked crepes on a plate and keep covered to stay soft.
- Fill and serve:
- Spread with your favorite filling, roll or fold, and enjoy.
