Instructions
1. Prepare the Dough
Warm the milk until lukewarm and mix with the yeast and a teaspoon of sugar. Let it stand for about 5–10 minutes.
In a large bowl, combine the flour, remaining sugar, and salt. Add the butter, egg yolks, vanilla, and yeast mixture.
Mix and knead gently until a smooth dough forms.
Divide the dough into 3 equal portions, cover, and refrigerate for about 30 minutes.
2. Prepare the Walnut Filling
Mix the finely ground walnuts with the sugar.
Set aside.
3. Assemble the Layers
Preheat the oven to 350°F (175°C).
Roll one portion of dough into a rectangle and place it in a parchment-lined baking pan.
Spread half of the apricot jam evenly over the dough, then sprinkle with half of the walnut-sugar mixture.
Roll out the second portion of dough and place it over the filling.
Repeat with another layer of apricot jam and walnuts.
Finish with the final sheet of dough.
Prick the top gently with a fork in several places.
4. Bake
Bake for approximately 30–40 minutes, until the pastry is lightly golden.
Remove from the oven and allow it to cool completely.
5. Add the Chocolate Topping
Melt the chocolate, butter, and cream together over low heat, stirring until smooth and glossy.
Spread the chocolate evenly over the cooled cake.
Allow the topping to set before cutting.
6. Slice and Serve
For the cleanest slices, chill the cake briefly before cutting.
Use a sharp knife to cut it into neat rectangles or squares.
Serve with coffee or tea.
Tips for Perfect Zserbó
- Use thick apricot jam so the layers don’t become soggy.
- Roll each dough layer evenly.
- Don’t overbake the pastry.
- Let the cake cool completely before adding the chocolate.
- Allow the finished cake to rest before slicing—the flavors become even better as the layers soften slightly.
