- Bake pastry:
Roll out puff pastry sheets and bake separately at 180°C (350°F) for 15–20 minutes until golden. Let cool.
- Make custard:
Heat milk with vanilla until warm. - In a bowl, whisk egg yolks, sugar, and cornstarch.
- Gradually add warm milk while whisking, then return to heat.
- Cook on low, stirring constantly until thick and smooth.
- Prepare meringue:
Beat egg whites until foamy. - Gradually add sugar and beat until stiff peaks form.
- Combine:
While custard is still warm, gently fold in the meringue until smooth and airy.
- Assemble:
Place one pastry layer in a tray. - Spread the custard evenly over it.
- Top with the second pastry layer.
- Chill:
Refrigerate for at least 3–4 hours until set.
- Dust with powdered sugar before slicing.
