Hungarian Crêpes (Palacsinta)

Instructions:

  1. Make the batter: In a bowl, whisk flour, eggs, milk, sugar, salt, and 2 tbsp oil/butter until smooth. Let rest 20–30 minutes.
  2. Heat the pan: Grease a non-stick skillet with a little oil or butter over medium heat.
  3. Cook the crêpes: Pour a small ladle of batter into the pan, swirling to cover the bottom thinly. Cook 1–2 minutes until edges lift, then flip and cook another 1 minute.
  4. Fill and serve: Fill with jam, sweet cottage cheese, Nutella, or poppy seed filling. Roll or fold and serve warm.
