
Instructions:
- Activate the yeast:
- Mix yeast with lukewarm milk and sugar.
- Let sit 5–10 minutes until foamy.
- Make the dough:
- In a large bowl, combine flour and salt.
- Add butter, egg, sour cream, grated cheese, and yeast mixture.
- Knead into a soft dough.
- Rest the dough:
- Cover and let rise for about 1 hour until slightly puffy.
- Roll and fold (for flaky layers):
- Roll out dough to about 1–2 cm thickness.
- Fold it like a letter, turn, and roll again.
- Repeat this process 2–3 times.
- Shape:
- Roll dough to about 2 cm thick.
- Cut into small rounds using a cutter.
- Score the tops lightly in a crisscross pattern.
- Brush and top:
- Brush tops with egg yolk.
- Sprinkle extra grated cheese on top.
- Bake:
- Preheat oven to 200°C (390°F).
- Bake 15–20 minutes until golden and puffed.
