Hungarian Cheese Biscuits (Pogácsa)


Instructions:

  1. Activate the yeast:
    • Mix yeast with lukewarm milk and sugar.
    • Let sit 5–10 minutes until foamy.
  2. Make the dough:
    • In a large bowl, combine flour and salt.
    • Add butter, egg, sour cream, grated cheese, and yeast mixture.
    • Knead into a soft dough.
  3. Rest the dough:
    • Cover and let rise for about 1 hour until slightly puffy.
  4. Roll and fold (for flaky layers):
    • Roll out dough to about 1–2 cm thickness.
    • Fold it like a letter, turn, and roll again.
    • Repeat this process 2–3 times.
  5. Shape:
    • Roll dough to about 2 cm thick.
    • Cut into small rounds using a cutter.
    • Score the tops lightly in a crisscross pattern.
  6. Brush and top:
    • Brush tops with egg yolk.
    • Sprinkle extra grated cheese on top.
  7. Bake:
    • Preheat oven to 200°C (390°F).
    • Bake 15–20 minutes until golden and puffed.
