Ingredients

  • 12 oz (350 g) egg noodles or wide pasta
  • 1 small head green cabbage, finely shredded
  • 1 large onion, thinly sliced
  • 3 tbsp lard or butter (traditional)
  • 1 tsp sugar (for caramelizing)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Cook noodles in well-salted water until al dente. Drain and set aside.
  2. Heat lard or butter in a large skillet over medium heat. Add sugar and let it melt until light golden.
  3. Add onions and cabbage. Season lightly with salt.
  4. Cook slowly, stirring often, until cabbage becomes soft, deeply caramelized, and slightly sweet (20–30 minutes).
  5. Add cooked noodles to the skillet and toss well.
  6. Season generously with black pepper and adjust salt.
  7. Serve hot.

Tips

  • Traditionally served very peppery
