Instructions:
- Activate the Yeast:
- In a small bowl, dissolve the yeast and sugar in the warm water. Add a pinch of ginger, stir, and let sit for 5-10 minutes until the mixture is bubbly.
- Prepare the Dough:
- In a large mixing bowl, combine the warm buttermilk, honey, salt, and melted butter.
- Add the activated yeast mixture to the buttermilk mixture.
- Gradually add the flour, one cup at a time, stirring well after each addition, until the dough comes together and is no longer sticky.
- Knead the Dough:
- Turn the dough out onto a floured surface and knead for 8-10 minutes, or until the dough is smooth and elastic. Add additional flour as needed, but avoid adding too much to keep the dough soft.
- First Rise:
- Place the dough in a greased bowl, turning it once to coat the surface. Cover with a damp cloth or plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- Shape and Second Rise:
- Punch down the dough and divide it into two equal portions. Shape each portion into a loaf and place into greased loaf pans.
- Cover and let rise again for about 30-45 minutes, or until the dough has risen slightly above the edge of the pans.
- Bake the Bread:
- Preheat your oven to 375°F (190°C). Bake the loaves for 25-30 minutes, or until the tops are golden brown and the loaves sound hollow when tapped on the bottom.
- Cool and Serve:
- Remove the loaves from the pans and let them cool on a wire rack. Brush the tops with melted butter for a soft, glossy finish.
