Homemade Fruit Preserves (Lekvárok)

  1. Return the strained puree to the pot.
  2. Add sugar gradually, tasting and adjusting for sweetness. (Start with 2 kg and add more if needed.)
  3. Stir constantly on low to medium heat until the mixture thickens to the desired consistency (this may take 1-2 hours).
  4. Optional: Add a few tablespoons of lemon juice for flavor and preservation.
  5. Jar the Preserves:
    • Pour the hot preserves into sterilized glass jars, leaving about 1 cm of headspace at the top.
    • Seal the jars tightly with lids.
  6. Seal and Store:
    • Place the jars in a large pot filled with hot water, ensuring the jars are fully submerged.
    • Boil for 10-15 minutes to create an airtight seal.
    • Remove the jars carefully and let them cool completely.
    • Store the jars in a cool, dark place.

Tips:

  • Use high-quality, ripe fruit for the best flavor.
  • Stir frequently while cooking to prevent the preserves from burning.
  • Adjust sugar levels to match the natural sweetness of your fruit.

Yield:

  • Approximately 6 kg of preserves, depending on the fruit’s water content.
