- Sauté the base:
Heat oil in a large pot over medium heat. Cook chopped onion until soft and translucent. Add garlic and cook for 1 minute. - Add paprika:
Remove the pot briefly from the heat and stir in the paprika to prevent burning. - Build the stew:
Add potatoes, chopped tomato, bell pepper, caraway seeds, and sausage if using. Stir well. - Simmer:
Pour in the broth, season with salt and pepper, and bring to a gentle boil. Reduce heat and simmer for about 25–30 minutes until potatoes are tender and the sauce thickens. - Serve:
Garnish with fresh parsley and serve hot with crusty bread.
🍲 Tip: The stew becomes even more flavorful if it rests for 10–15 minutes before serving, allowing the paprika sauce to deepen.
