
Hearty Homestyle Vegetable Beef Soup (New Version) 🥣🥩

Ingredients
- 1 lb (450 g) beef stew meat, cubed
- 2 tbsp oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 potatoes, diced
- 1 cup green beans
- 1 cup diced tomatoes (canned or fresh)
- 6 cups beef broth
- 1 tsp paprika
- ½ tsp dried thyme
- Salt & black pepper, to taste
- Fresh parsley, chopped
Instructions
- Brown the Beef
Heat oil in a large pot. Brown beef on all sides. Remove and set aside. - Sauté Aromatics
In the same pot, sauté onion and garlic until fragrant. - Build the Soup
Return beef to the pot. Add carrots, celery, potatoes, green beans, tomatoes, broth, paprika, thyme, salt, and pepper. - Simmer
Bring to a boil, reduce heat, and simmer 45–60 minutes until beef is tender and vegetables are soft. - Finish & Serve
Taste and adjust seasoning. Garnish with parsley and serve hot with crusty bread.
