Ingredients

  • 1 lb (450 g) beef stew meat, cubed
  • 2 tbsp oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 potatoes, diced
  • 1 cup green beans
  • 1 cup diced tomatoes (canned or fresh)
  • 6 cups beef broth
  • 1 tsp paprika
  • ½ tsp dried thyme
  • Salt & black pepper, to taste
  • Fresh parsley, chopped

Instructions

  1. Brown the Beef
    Heat oil in a large pot. Brown beef on all sides. Remove and set aside.
  2. Sauté Aromatics
    In the same pot, sauté onion and garlic until fragrant.
  3. Build the Soup
    Return beef to the pot. Add carrots, celery, potatoes, green beans, tomatoes, broth, paprika, thyme, salt, and pepper.
  4. Simmer
    Bring to a boil, reduce heat, and simmer 45–60 minutes until beef is tender and vegetables are soft.
  5. Finish & Serve
    Taste and adjust seasoning. Garnish with parsley and serve hot with crusty bread.
