  2. Mix the salad: In a bowl, combine chopped eggs with mayo, mustard, onion, herbs, and seasoning. Stir until creamy and well-blended. Taste and adjust salt, pepper, or paprika as needed.
  3. Assemble the sandwich: Spread the egg salad onto your bread or roll. Add lettuce or any other toppings you like.
