Green Chili Ground Beef Egg Rolls

Ingredients

  • 1 lb ground beef
  • 1 cup roasted green chiles, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • Salt and pepper, to taste
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 12–14 egg roll wrappers
  • Oil for frying (or cooking spray for baking/air fryer)

Instructions

  1. Cook ground beef with onion and garlic until browned; drain excess fat.
  2. Stir in green chiles, cumin, chili powder, salt, and pepper. Remove from heat.
  3. Let cool slightly, then mix in shredded cheese.
  4. Place 2–3 tbsp filling on each egg roll wrapper; roll and seal edges with water.
  5. Fry in hot oil at 350°F (175°C) for 3–4 minutes until golden, or
    bake at 400°F (200°C) for 15–18 minutes, or air fry at 380°F (193°C) for 8–10 minutes.
  6. Serve hot.
