GREEN BEANS STEW – ZÖLDBAB FŐZELÉK


👨‍🍳 Instructions

1. Cook the green beans

  • Bring salted water to a boil.
  • Add green beans and cook until tender (10–15 minutes).
  • Drain and set aside.

2. Make the base

  • Heat oil or butter in a pan.
  • Add chopped onion and cook until soft.
  • Add garlic and cook briefly.

3. Make the roux (rántás)

  • Stir in flour and cook for 1 minute.
  • Remove from heat and add paprika (important to avoid burning).
  • Mix well.

4. Build the stew

  • Slowly add water or broth while stirring to avoid lumps.
  • Add cooked green beans and bay leaf.
  • Simmer for 10 minutes until slightly thickened.

5. Finish with cream

  • Mix sour cream with a little hot liquid from the stew.
  • Stir back into the pot.
  • Add vinegar (or lemon juice) and a little sugar.
  • Season with salt and pepper.

🍽️ Serving

  • Serve warm as a main dish or side
  • Traditionally paired with:
    • Fried eggs 🍳
    • Sausages 🌭
    • Meatballs 🍖
