
Instructions
1. Prep the pork
- Pat pork loin dry.
- Mix olive oil, garlic, parmesan, herbs, paprika, salt, pepper, and lemon juice.
- Rub mixture all over the pork loin.
2. Roast
- Place pork on a baking tray or roasting pan.
- Roast at 190°C / 375°F for 50–60 minutes,
or until internal temperature reaches 63°C / 145°F. - Broil 2–3 minutes at the end for extra crust (optional).
3. Rest
Let the pork rest 10 minutes before slicing — this keeps it juicy.
4. Serve
Perfect with mashed potatoes, roasted veggies, rice, salad, or pasta.
