Instructions:

  1. Caramelize the Onions
    • In a skillet, melt butter over medium heat.
    • Add sliced onions, sugar, and salt.
    • Cook slowly, stirring occasionally, for 20–25 minutes until golden brown and sweet.
    • Set aside a few onions for topping.
  2. Prepare the Meatloaf
    • Preheat oven to 350°F (175°C).
    • In a large bowl, combine ground meat, chopped onion, garlic, breadcrumbs, egg, milk, Worcestershire sauce, salt, pepper, and thyme.
    • Mix until just combined.
  3. Shape & Bake
    • Shape meat mixture into a loaf and place in a greased baking dish.
    • Top with remaining caramelized onions.
    • Bake for 50–60 minutes, or until internal temperature reaches 160°F (71°C).
  4. Make the Gruyère Cream
    • In a small saucepan, heat heavy cream over low heat.
    • Stir in shredded Gruyère until melted and smooth.
    • Season with salt and pepper to taste.
  5. Serve
    • Slice meatloaf and drizzle with Gruyère cream sauce.
    • Garnish with reserved caramelized onions.

💡 Tips:

  • For extra flavor, mix a little Dijon mustard into the meatloaf mixture.
  • Serve alongside mashed potatoes or roasted vegetables for a complete comfort meal.
  • Gruyère can be substituted with Swiss or Fontina cheese if needed.
